Jose Sandoval deftly slid a shucking knife into an oyster shell Monday afternoon, popping open the shell and placing it on ice in one quick and fluid motion. 

On the busiest summer nights, Sandoval shucks hundreds of oysters while standing behind a bar at Red Fish Blue Fish on Pensacola Beach. 

The restaurant collects the discarded oyster shells, which are picked up by the Emerald Coast Utilities Authority and used to build oyster reefs in area bays and estuaries.
